Spinach Enchiladas

This was a new recipe I tried last night for dinner. It got rave reviews at my house so I thought I would pass it on to you all. Josh loved it and didn't even notice there was no meat in it until I said something. Jack ate almost an entire enchilada. He will eat anything as long as it is served with sour cream!

Note: I used flour tortillas instead of corn and they were bigger than 6 in. (made 7 enchiladas). I heated the tortillas in the microwave instead of the skillet. I also served these with sour cream and salsa on the side.
