Special Breakfast


Today starts Josh's Christmas vacation. He is home until January 4. So, to start his vacation right we had a special breakfast, puffed pancake and brown sugar bacon. This puffed pancake is a special treat that I like to make whenever we have berries in the house. The brown sugar bacon was something new I tried this morning and we found it to be very addictive.

Puffed Pancake

Melt in large cast iron skillet:
3 Tbsp. butter
*I put the butter in the skillet and place in the oven while it is preheating.

Mix together:
2 eggs
1/2 C. milk
1/2 C. flour
dash of salt

Pour into hot skillet. Bake at 425 degrees for 12 to 13 minutes, until golden brown. Serve immediately (it starts to deflate as soon as you take it out of the oven). Sprinkle with powdered sugar and top with fresh berries or syrup. Serves 2-3.

Brown Sugar Bacon
Place 1 lb. of bacon on slotted broiler pan. Generously cover with brown sugar. Sprinkle black pepper on top and pat gently. Bake in 400 degree oven for 15- 20 minutes. I added kosher salt as soon as it came out of the oven.
