Menu for Week of 10/16/09

Baked Potato Soup, bread
I will post this recipe later in the week.

Pork Sandwiches, oven fries, corn
using leftover pork and mustard sauce from earlier in the week

Spinach Enchiladas, salad

Spaghetti and meatballs, salad, bread
This recipe from my mom is great because you can freeze the meatballs and pull them out as you need them. Great to use on spaghetti or on a sandwich.

Meatballs
Pamela Trover

4 bread slices
1/2 C. water
2 eggs
1 lb. ground beef
1/4 C. grated parmesan
2 Tbsp. snipped parsley
1 tsp. salt
1/4 tsp. salt
1/4 tsp. dried oregano
dash pepper

Soak bread in water 2-3 min. Add eggs and mix well. Mix with meat, cheese, and seasonings. With wet hands, form into small balls. Place in baking dish and bake at 350 degrees for 30 minutes. Add to sauce and simmer until cooked through.
