Have your cake and eat it too!

Here is a simple and delicious chocolate cake recipe. I made this for Jack's birthday cake this year. What is so great about this recipe is that you usually have all the ingredients on hand to make the cake and frosting. The frosting is wonderful, not too sweet. If you like chocolate just add cocoa to taste to the frosting before beating. My mom used to make this for us when we were little. So this is one of many recipes passed down to me from my mother.

Wacky Cake
Pam Trover
1 1/2 C. flour
1 C. sugar
3 Tblsp. cocoa
1/2 tsp. salt
1 tsp. soda
1 Tblsp. vinegar
1/2 stick margarine, melted
1 tsp. vanilla
1 C. cold water

Mix dry ingredients in a medium size bowl. Make 3 wells in the mixture. Pour margarine, vanilla, and vinegar into the wells. Pour cold water over the whole thing. Whisk together. Pour into greased 11 x 7 1/2 in. pan. Bake at 350 degrees for 25 minutes.

*You can double the recipe to make a 2 layer cake or 9 x 13 in.

White Frosting
1/2 C. shortening
1 egg white
1 tsp. vanilla
1 1/2 C. powdered sugar

Beat for 5 minutes

*If you are making a 2-layer cake I would triple the frosting recipe to be sure you have enough.
